Well, who knew back in da dayz that I would love to bake stuff and cook some simple things in general.
Having two boyz makes you recalculate your time spent in the kitchen, so now I have not more than 30 minutes. That's why most of the stuff I will post will be quick and easy to make.
I don't eat a lot of sweet things but I love them in general and have a bite or two on a daily basis. Also thinking about healthy I prefer to skip added sugars and other not-so-healthy things, especially post partum. On the other hand I make it for everybody so it must be also fine for the kids (well the older cuz he eats stuff, the other one is still breastfed).
So basically this is the recipe for a quick apple poppy seed cake. Got it from a friend of mine and changed it a bit with time.
1 cup honey (or 1 cup coconut sugar)
pinch of salt
1 and 1/3 cups coconut oil (if you like you can use any oil of your choice)
3 cups of whole grain flour
2 tsp baking soda (no aluminium)
2 grated apples
50-80-100 gr poppy seeds
Mix honey/sugar with eggs, beat very very well, then add salt and oil. In a separate bowl add flour and baking soda, then mix it in the liquids cup. Add apples and poppy seeds, mix well. Preheat the oven to 175°.
Put the mixture in a greased cake pan, put it in the oven and bake for at least 45 min or until a toothpick comes out clean.
